Snickerdoodle Cookies

It was one of those nights deserving of a cookie, but not a basic dough.  I was looking for some flavor  but lacking chocolate chips, cocoa powder, or any other add-ins.  Then I remembered that when my husband and I were first dating, his family used to bake some amazing Snickerdoodle cookies every now and again.  I think they were from a refrigerated dough, but what matters is that the soft cookies coated in cinnamon sugar were nothing less than delightful.





I used a Snickerdoodle recipe and decided to use brown sugar and add in some vanilla extract to give them a real boost of flavor.

I mixed the butter, brown sugar, white sugar, vanilla, and eggs until well combined.  In a separate bowl, I combined the flour, cream of tartar, baking soda and salt, then gradually stir into the butter mixture. Next, I placed the dough in the fridge for several minutes to firm it up. 



After letting the dough chill for a few minutes, I made the Snickerdoodles by forming the dough into a ball shape then rolling it a mixture of cinnamon and sugar.


I laid the dough out on parchment paper before baking them in the oven.


They were ready after about 11 minutes and had puffed up considerably.  My house smelled amazing!


They were absolutely delicious.  My husband had me make a few cookies without the cinnamon sugar outside, and I have to say that they were tasty but the cinnamon sugar wins by a long shot.  And of course the brown sugar added that extra bit of sweetness.  I gave these out to my family because they were so fantastic I had to share, and everyone said they demolished the cookies right when they got home because they were so good.  Snickerdoodles are going to be one of my holiday cookies this year for sure!

Snickerdoodle Cookies Recipe

Ingredients:

1 cup butter
1 cup brown sugar
1/2 cup sugar
2 eggs
1 teaspoon vanilla extract
2 3/4 cups flour
2 teaspoons cream of tartar
1 teaspoon baking soda
1/4 teaspoon salt
3 tablespoons sugar
3 teaspoons cinnamon

Instructions:

Heat oven to 350 degrees F. In a large bowl, mix butter, brown sugar, white sugar, vanilla, and eggs until well combined. Mix flour, cream of tartar, baking soda and salt in a small bowl, then gradually stir into the butter mixture. Chill dough for 10-15 minutes in the fridge. On a plate or in a small bowl, mix sugar and cinnamon. Form dough into small balls and roll in the sugar and cinnamon. Place on a parchment lined baking sheet and bake for
10-12 minutes.
