Crock Pot Chicken Tacos (Take 2)


My husband was traveling for a few days, and I told him I'd make anything he wanted when he came home. His choice was the a chicken taco recipe I made a few weeks ago. Of course I was willing to make it again, it tasted great!

I started by layering the chicken in the bottom of the crock pot.  It wasn't until I went to actually put it together that I realized I didn't have nearly enough salsa.  My favorite part of cooking is making recipes my own, putting my own spin on it. I needed to add something else, so I decided on a can of tomatoes and extra seasoning. After pouring the salsa, tomatoes, and seasoning over the chicken, I started cooking the mixture on high.


Half-way through, the chicken was cooking nicely.


After 4 hours, the chicken was shredding easily and smelled amazing. 


Here's a close up of the finished shredded chicken.  I served it on tortillas, but it's excellent even plain or with rice.


In the end I came up with a pretty spicy chicken crock pot meal, and it was a success!  I think the extra tomatoes added a boost of flavor, and I didn't have to use a whole jar of salsa.  Yum.

Crock Pot Chicken Tacos

Ingredients:

4 chicken breasts
1/2 jar salsa
1/4 cup taco seasoning (or 1 packet)
1 can diced tomatoes
1 tablespoon dried minced onion
1 teaspoon garlic
2 teaspoons crushed red pepper

Instructions:

Place chicken in crock pot and pour salsa over. Add dry ingredients and pour can of tomatoes over the top. Stir and cook on high 4 hours.
