French Toast Muffins


Two muffin posts in a row! This is a recipe I made recently and I found it here through Pinterest (surprise, surprise!). It sounded so good I had to give it a shot. The recipe is called "French Breakfast" muffins on the originating blog, which I just noticed today. Since I initially knew them as French toast muffins and have been calling them it since, that's what I'll stick with. I gave a bunch of them to family and they were a big success. And the baking obsession began.

Here's the recipe:
1/3 cup melted butter
1/2 cup sugar
1 egg
1 1/2 cup flour
1 1/2 teaspoon baking powder
1/2 teaspoon salt
1/4 teaspoon nutmeg
1/2 cup milk

For the topping:
1/2 cup sugar
1/2 melted butter
1 teaspoon cinnamon

Heat oven to 350 degrees. Sift together sugar, flour, baking powder, salt, and nutmeg in a medium bowl. Add melted butter, egg, and milk and stir until mixed but still lumpy. Do not over mix. Spoon into lined muffin pan, filling cups 2/3 full, and bake 20-25 minutes. Remove from oven and allow muffins to cool for 10 minutes. For the topping, melt butter in a small bowl and mix cinnamon and sugar in a separate bowl. Dip muffin tops in butter then in sugar mixture. Makes 12.
