Pan-seared, Oven Baked STEAK!


I went 2 years without eating red meat. I focused on chicken and turkey instead, planning to eventually switch to a full vegetarian diet. I eventually decided to try eating beef again after experiencing some health problems and discovered that it really made a difference for me. Now I consider myself a burger connoisseur. When my husband and I won a trip to Los Angeles last year, we ate at every burger place we could find. At home we typically eat more chicken and ground turkey, but when we go out I enjoy trying different burger options. I haven't cooked beef often, but I decided to try cooking my own steak. I followed this recipe a few weeks ago with filet mignon, and it was literally fantastic.

This time I went with a sirloin strip to see how it came out. I initially learned of this steak cooking method here.  I don't have the freshest herbs as called for in the original recipe, so I went about it my own way with what I had on hand. This time around I added ground thyme.

I started by seasoning the steak with salt and pepper and cooking it in a cast iron skillet with butter.



I flipped the steak a few times while cooking and continually scooped the butter from the pan over the steak.


Even though the cast iron skillet is oven safe, I moved the steaks to a broiler pan to finish baking because the last time I left the steaks on the skillet they were burned on the bottom. Maybe removing the steaks and wiping the excess butter and garlic out of the pan would prevent this, but the broiler pan worked perfectly the during my first use so I stuck with it.


Of course they came out awesome.  This cut of steak was obviously not as amazing as the filet minion for obvious reasons, but the seasoning and butter did make for one delicious piece of meat.  This is a method I will never stop using!

Pan-seared, Oven Baked Steak Recipe

Ingredients:

2 top sirloin fillets
1 stick of butter
2 tablespoons minced garlic
1 tablespoon parsley
1/2 teaspoon garlic salt
1 teaspoon ground thyme
1 tablespoon salt
1 tablespoon pepper
1 tablespoon olive oil

Instructions:

Preheat oven to 400 degrees. Cut butter stick in half. Place 1/2 stick in large cast iron skillet and soften the other 1/2 in a small bowl in the microwave. Mix minced garlic, parsley, thyme, and garlic salt with the softened butter, reform into small log, and place in the fridge. Season fillets with salt and pepper on both sides. Put olive oil in skillet with the butter and heat up to searing. Place steaks in skillet and cook about 3 minutes per side until browned. Spoon butter from pan over steak while it cooks. Move steaks to broiler pan and put half of the butter and seasoning mixture on top of each. Place in oven for 8-10 minutes until cooked (depending on thickness and how well done you like your steak. I left ours in about 15 minutes total because I prefer my steak cooked medium-well).

  1. I don't have a cast iron, do you think a George Forman could work?

    1. Hi there! Though I haven't tried using my George Foreman for this recipe, I don't see why it wouldn't work! I would just life the lid every minute or two and spoon more butter over it to keep it moist. Hope this helps!

  2. Amazing!!!! We did not have an iron skillet so we used a regular frying pan. Turned out great.
