I'm always up for cooking something I haven't tried yet. I ate stuffed peppers and stuffed cabbage all the time as a kid, though not without complaints. Nowadays I love vegetables, and have been excited to try my grandmother's stuffed pepper recipe.
I started by cutting the tops off the peppers and hollowing them out, removing all the seeds. Then I boiled the peppers for about 5 minutes to soften them.
I browned the ground turkey in a separate pan, then added the white rice and tomato sauce. Since I decided to also bake muffins while cooking this, I managed to leave out 1/4 cup brown sugar from the mix (oops!). I ended up with way more of the rice/meat mixture than I needed, and there seemed to be a significant amount of excess rice, so next time I will either use more peppers or cut the amount of rice in half.
I stuffed the peppers with the rice mixture, then baked them for 30 minutes.
The finished product was so tasty. The combination of flavors from the tomato sauce, turkey and the pepper was fantastic. I love cooked green peppers, and it's nice to have a compact, all-inclusive meal. Can't wait to try it with the brown sugar next time!
Stuffed Bell Peppers Recipe
Ingredients:
3 green bell peppers
1 pound ground turkey
2 bags white boil in the bag rice
1 can tomato soup
Instructions:
Brown ground turkey in a large skillet. In the meantime, boil white rice. Cut off the pepper stems and remove seeds from inside. Boil peppers for 5 minutes to soften slightly. Once rice and ground turkey are cooked, pour rice and tomato soup in skillet and mix well. Stuff rice mixture into peppers and bake for 30 minutes at 375 degrees.
