Cinnamon Bun Cookies with Frosting


I needed a quick dessert recipe last minute for dinner with family, and after some searching, an image of Cinnabon Roll Cookies caught my eye. I used a bit less sugar than the original recipe and skipped milk in the frosting. I also didn't make all the cookies the cinnamon roll style as I was crunched on time.

I started out by mixing the ingredients together for the dough. It's so easy, with all the dough mixed in one bowl. I started with a spoon but found it easier to work with my hands.


Once the dough was fully mixed, I rolled out some pieces to make the cinnamon rolls. I made them bigger than the recipes suggestion of 3 inches, but found the dough crumbling quite a bit.


I ended up switching to round cookies dipped in the cinnamon sugar mixture, but would probably try refrigerating the dough next time for making the roll shape.


Then, I placed them in the oven and let them bake for 12 minutes.


I mixed the glaze in a small bowl.


And after adding the frosting, the cookies were complete.


My family loved them! The cinnamon roll ones were really cute, and the shape of the other ones sure didn't harm their flavor. This was a fun one to try.

Cinnamon Roll Cookies Recipe

Ingredients:

For the dough:
2 cups flour
1/4 teaspoon salt
1 cup butter at room temperature
1/2 cup powdered sugar
1 teaspoon pure vanilla extract
1 1/2 cups sugar
3 teaspoons cinnamon

For the frosting:
1 1/2 cups powdered sugar
1/2 teaspoon pure vanilla extract
3 tablespoons butter

Instructions:

Heat oven to 350 degrees F. Combine flour, butter, salt, powdered sugar, and vanilla in a large bowl and mix until the dough forms into a soft ball. Mix cinnamon and sugar in a small bowl. Sprinkle flour on a flat surface and roll pieces of dough into small ropes, then roll the into a mixture of cinnamon and sugar. Roll the rope into circles and place on a cookie sheet lined in parchment paper. Place in the oven and bake 10-12 minutes, until edges are browned. In a small bowl, microwave butter for a few seconds to melt. Mix in powdered sugar and vanilla extract. Frost cookies while warm them by spooning a teaspoon of frosting on each one.
