Crock Pot Greek Chicken


Time for a new crockpot meal! I was craving the BBQ chicken again, but since I've been making it so often I opted for something new. The recipe basis is from a crockpot book my sister let me borrow (Fix it and Forget it). I have a ridiculous number of pages marked to try later. This chicken recipe was an easy choice because I'm Greek and LOVE Greek style cooking. I always look forward to pigging out at the yearly Greekfest nearby. Eventually I'll be posting about making Tiropitas and Galactoboureko when I make them again!

I started out by spraying some olive oil in the bottom of the crock pot, then added some canned vegetables.


I layered the chicken over the vegetables, then added the onion, garlic, and seasoning over the top.  I could already tell this was going to be a good one!


Halfway through, I stirred the mixture and noticed everything was cooking nicely. 


I let this one cook for 5 hours on high and the chicken was shredding easily. 


It came out like a stew and oh my it was good! it definitely had a little spicy/peppery kick to it. The potatoes were full of flavor.  My husband said it was simply amazing and one of his favorite crock pot meals to date. Now that's a good sign. 


Crock Pot Green Chicken Recipe

Ingredients:

1 can whole potatoes
1 can mixed vegetables
4 chicken breasts
1/2 onion, cut into large chunks
2 tablespoons minced onion
3-4 teaspoons minced garlic
3 teaspoons dried oregano
1 teaspoon salt
1/2 teaspoon pepper
1 tablespoon olive oil

Instructions:

Place potatoes and vegetables in bottom of crock pot. Place chicken on top and put onion, garlic, oregano, salt, pepper, and olive oil on top. Cook on high 5-6 hours.
