Parmesan Crusted Chicken


I found this Parmesan crusted chicken recipe through Pinterest recently and decided to try it out last night. It caught my eye because it was described as "OMG Chicken", so I figured I couldn't go wrong. Now the original recipe listed on the blog calls for mayonnaise in the topping but I just can't bring myself to cook with it. Mayonnaise and I are not friends. I know there are many dip recipes that use it, but unless it's deviled eggs or potato salad, I'm finding a substitution.

In this case I went with sour cream. That what was actually listed in the original description/caption of the recipe when I saw it on Pinterest, and since I used sour cream in the Cheese and Italian Herb Stuffed Chicken Breasts and it worked out great, it seemed like a safe choice.

I first mixed the sour cream, cheeses, and seasoning together in a small bowl.


Then, I sprayed a casserole with nonstick spray and arranged the chicken inside.


Next, I spread the cheese mixture over the chicken, all the way to the edges of the casserole dish.


Then I added bread crumbs and some more mixed Italian seasoning over the top.


I let the chicken bake for just over 30 minutes and they were perfectly cooked.



The chicken was incredibly tender and the sour cream mixture worked out great over the top of the chicken because none of it melted off.  Next time I would like to maybe add some provolone cheese and some lemon juice (and more than likely some crushed red pepper) into the sour cream mixture.  I brought this over to my sister's and everyone loved it!  Just another Pinterest success story.

Parmesan Crusted Chicken Recipe

Ingredients:

3-4 chicken breasts
1/2 cup sour cream or yogurt
1/8 grated Parmesan cheese
1/4 cup shredded mozzarella cheese
1-2 tablespoons mixed Italian seasoning
1/2 cup bread crumbs

Instructions:

Heat oven to 425 degrees F. Mix sour cream, Parmesan and mozzarella cheeses, and 1 tablespoon mixed Italian seasoning in a small bowl. In a baking dish, lay chicken breasts side by side. Spread sour cream mixture over chicken until they are covered, then sprinkle bread crumbs over the top about 1 teaspoon of Italian seasoning. Bake for 25-30 minutes until chicken is fully cooked.
