Baked Chicken Parmesan
Italian food is always an easy choice for me. I love pasta, and chicken Parmesan is my absolute favorite dish (though I'm partial to eggplant, too). So when I was looking for a chicken recipe I figured it was time to give it a try. I was not in the mood at all for pan-frying, and have been trying to make some healthier options, so I opted for a baked version. I found this oven-baked chicken parm recipe that had some great reviews, and just downsized the amount of pasta sauce so that it wouldn't be completely soaked.
First I dipped the chicken in the egg mixture, then in the bread crumbs and coated both sides.
Then I arranged the chicken in a baking dish.
I added the pasta sauce and cheese to the top and placed the chicken in the oven.
They were perfect after 30 minutes of baking. I left them in for 30 because they were slightly frozen when I put them in the oven.
It was so good and ridiculously easy! I'm glad I cut back on the sauce because it the bread crumbs cooked well and stayed on the chicken. I served it with vegetable noodles and dinner was fantastic!
Baked Chicken Parmesan Recipe
Ingredients:
3 chicken breasts
1 egg
1/2 cup bread crumbs
1 tablespoon mixed Italian seasoning
1/4 cup pasta sauce
1/4 cup mozzarella and parmesan cheese
Instructions:
Heat oven to 400 degrees F. Beat egg slightly in a small bowl. Mix bread crumbs and Italian seasoning on a plate. Dip chicken in egg mixture then in bread crumb mixture to coat. Set side by side in a casserole disha and spread pasta sauce over the top. Sprinkle cheese over the top and cook for 25-30 minutes until chicken is fully cooked.
