Flourless Peanut Butter Honey Cocoa Cookies


You can't go wrong with peanut butter and chocolate. I've been wanting to try some more recipes without flour, and I saw a post recently for cookies that said to use peanut butter, honey, egg, and baking soda. The recipe link didn't lead anywhere, so I started browsing peanut butter recipes and found this Flourless Peanut Butter Cookies recipe. I decided to give this version a try and added some honey.

I mixed the peanut butter and sugar together first. I substituted 1/2 cup honey in place of half of the sugar.


I thought about adding some hazelnut spread with the peanut butter but instead added some cocoa powder because it fits so well with peanut butter.



Next I stirred in the beaten egg and baking soda to finish the dough.


I scooped the dough onto a baking sheet and got them in the oven.


I let them cook for 12 minutes and they had gotten huge.


Wow, I have hit the cookie jackpot. Even with all that honey, the flavor that sticks out is the chocolate and it is perfect. Adding cocoa powder was a good call. I can't believe there isn't any flour in these because the texture is just like a regular cookie. I'm glad I gave this recipe a try. This makes me want to test out some more flourless recipes with vegetables in them too, like zuchinni muffins or brownies. Oh yes.

Flourless Peanut Butter Honey Cocoa Cookies Recipe

Ingredients:

1 cup peanut butter
1/2 cup honey
1/2 cup sugar
1/2 cup cocoa powder
1 egg
1 teaspoon baking soda

Instructions:

Heat oven to 350 degrees F. Mix peanut butter, honey, and sugar together until creamy. Add cocoa powder and mix well. Slightly beat 1 egg in a small bowl then add to peanut butter mixture. Add baking soda and stir well. Spoon onto a parchment paper-lined baking sheet and bake for 10-12 minutes.
