Paprika Parmesan Chicken
I was looking for something new to make because we were having some family over for dinner, and after considering all kinds of chicken recipes I finally decided on Baked Paprika Parmesan Chicken. Paprika adds so much flavor to the homemade BBQ sauce I make for Crockpot Pulled Chicken, so I had a good feeling this recipe would turn out well.
First I mixed grated Parmesan cheese, flour, paprika, salt and pepper in a wide bowl.
I mixed egg and milk separately, then dipped the chicken breasts first into the egg then into the Parmesan mixture, coating all sides. I laid the coated chicken breasts out in large casserole dish, covered them with foil and placed them in the oven. I skipped the step of pouring melted butter over the chicken.
I baked them for 1 hour 15 minutes total, removing the foil for the last 25 minutes. I also drained some liquid from the bottom of the baking pan at that time.
Oh yes, that was some moist and tasty chicken. It came out with a good coating that had baked on to nicely. I loved the paprika and Parmesan combination and everybody said it was great! My husband it tasted like KFC's chicken and you can't beat a complement like that.
Paprika Parmesan Chicken Recipe
Ingredients:
6 chicken breasts
1/4 cup all-purpose flour
1/2 cup grated Parmesan cheese
2 teaspoons paprika
1/2 teaspoon salt
1/2 teaspoon black pepper
1 egg , beaten
2 tablespoons milk
Instructions:
Preheat oven to 350 degrees F. Coat a shallow baking dish with nonstick cooking spray. Mix flour, parmesan, paprika, salt, and pepper in a bowl. In a separate bowl, whisk together the egg and milk. Dip the chicken in the egg, then coat the chicken with the flour mixture. Arrange chicken in the baking dish, cover with foil, and bake for 45-50 minutes. Remove foil, drain or spoon any liquid from the chicken out the of pan, and bake for an additional 25 minutes. Cook until the cheese has browned and the chicken is cooked. Bake 50 minutes then remove foil.
