Taco Lasagna



I ended up with some corn tortillas recently, not realizing that I really prefer the flour kind for tacos and the kind of things we usually make.  So I decided to see what I could bake with them, and after finding several enchilada options I stumbled across a Corn Tortilla Chicken Lasagna recipe that sounded amazing--an Italian-style Mexican dish?  Yes, please.

The original recipe is for 2 large casseroles, so I cut back all of the ingredients to fit into one smaller sized baking dish, and used ground turkey with taco seasoning instead of chicken.

I laid out corn tortillas in the bottom of a casserole dish sprayed with non-stick cooking spray.  Then I spread a layer each of ground turkey, refried beans, salsa, sour cream, and cheese.

I repeated the layers twice, pressing down slightly on the tortillas when I added a new layer to spread out the ingredients.  I topped the lasagna off with cheese.


I then covered it with foil and placed it in the oven.  After 25 minutes, I uncovered it and let it bake for 10 more minutes until the cheese was melted. I let it cool for 10 minutes before serving.


Yet another WOW recipe!  My husband went crazy for this dish, and he even asked me if I only did 1 layer of corn tortillas because the flavors blended so well.  I thought it was great too, and so easy to make.  My first thought for next time is adding some corn and baking it with rice in the layers as well.  There are so many options for this recipe, including using different types of beans and adding vegetables.  I'm definitely glad I tried this out!

Taco Lasagna Recipe

Ingredients:

9 corn tortillas (6 inches)
1 pound ground turkey, browned
2 tablespoons taco seasoning
1/4 cup water
1 can refried beans, drained
2 cups (One 16 ounce jar) salsa
1 cup sour cream
1 cup (8 ounces) shredded mixed Mexican cheeses

Instructions:

Brown turkey in a large skillet and drain. Add taco seasoning and water and simmer for 5 minutes. Heat oven to 350 degrees F.  Spray a 11 x 7 inch casserole dish with non-stick cooking spray, then lay 3 corn tortillas in the bottom.  Add one-third of the total of each of the ingredients: ground turkey, refried beans, salsa, sour cream, and cheese.  Repeat the layers twice and top with cheese.  Cover with aluminum foil and bake for 25 minutes.  Uncover and cook for 10 additional minutes, until cheese is melted.  Remove from oven and cool for 10 minutes before serving.
