Toasted Sesame Seeds and Almonds


So the Koliva recipe I have been preparing for requires toasted sesame seeds and almonds, and I had never tried nut or seed roasting before.
From what I read, it's easy to burn them so you have to be diligent in stirring the seeds or nuts frequently.  I referred to a few recipes when toasting the sesame seeds and almonds.

First I spread out a thin layer of sesame seeds on a pan lined with parchment paper.


I put them in the oven for 2 minutes, then stirred them.  I repeated stirring them every few minutes.



 They were golden brown after baking for 11 minutes total, so I removed them from the oven.


I moved the sesame seeds to a bowl after they had cooled down and then spread the almonds out on the pans.


I began toasting them and also stirred them every 2 minutes.  They were ready after 6 minutes in the oven.


Now that wasn't nearly as hard as I had expected.  Since this was for another recipe, I didn't add any seasoning or sugar, but next time I'll have to give it a shot.  Now to finish the Koliva!

Roasted Almonds and Sesame Seeds Recipe

Ingredients:

1 pound sesame seeds
1 pound sliced almonds

Instructions:

Preheat oven to 350 degrees F.  Spread out sesame seeds on 2 cookie sheets. Bake for 5-10 minutes, stirring every 2 minutes.  Remove from oven when you can smell the sesame scent and the seeds are a light golden brown.  Repeat with almonds; remove from oven when the almonds have slightly darkened from original color.
