Dijon Chicken



Ever since I saw a recipe for Dijon chicken recently, I've been wanting to give it a try.  I haven't used Dijon in any cooking and it's not something I typically use on sandwiches or anything either--spicy brown is my weapon of choice.  I finally picked up some Dijon mustard the other day to use and picked out a Baked Dijon Chicken recipe to get an idea of how much to use.  I tossed in some salt, dried onion, crushed red pepper, and upped the ingredients to cover 3 chicken breasts.







I laid out the chicken in a baking dish, and in a small bowl mixed they're Dijon mustard, lime juice, onion, garlic, red pepper, salt and pepper until combined. Then I spread the mixture over the top of 4 frozen chicken breasts.


Next I baked the chicken or 40 minutes, uncovered, until fully cooked in the middle.


Whew! That was some tangy chicken. I haven't used Dijon mustard much before but it has a kick for sure. The chicken was moist and flavorful, but the mustard that baked on top of the chicken was a bit overwhelming.  I think next time I'll add some honey to sweeten it up, but for a quick chicken dish this worked out well.  I'm always up for some new flavor!

Dijon Chicken Recipe

Ingredients:

3 frozen chicken breasts
4 tablespoons Dijon mustard
3 teaspoons lime juice
1 teaspoon dried minced onion
1/2 teaspoon minced garlic
1/4 teaspoon crushed red pepper
1/4 teaspoon salt
1/8 teaspoon pepper

Instructions:

Lay out chicken in a casserole dish. In a small bowl, mix together mustard, lime juice, minced onion, garlic, red pepper, salt and pepper in a small bowl.  Spread the Dijon mixture over the chicken and place in the oven for 40 minutes, until chicken is cooked through.
