Chunky Oatmeal Cookies

 We had some family in town few days back, and I decided to bake some cookies to have around for dessert.  I was out of chocolate chips but had a bunch of oats on hand, so I decided to try the Homemade Oatmeal Cookies recipe with regular oats rather than the quick cooking variety.





I repeated the original recipe exactly, by mixing together butter and sugars until creamy, then adding eggs and vanilla. In a small bowl, I stirred the flour, salt, baking powder, and baking soda together, then gradually poured the flour mixture into the dough and mixed. Then I added the regular oats.  The dough was very thick and chunky.


I spooned the dough onto parchment lined pans and baked the cookies for 10 minutes.


I pulled them from the oven when they were slightly browned.


I knew from the last time I made Homemade Oatmeal Cookies that they are amazing of course, but the regular oats made for one very chunky and delicious cookie.  I baked the cookies on different racks, so some of them turned out crispy and others turned out soft--and it was hard to decide which was better.  Though I'm normally a fan of the soft variety, I really found the crunchier ones to be fantastic and my husband is sold on baking with regular oats.

Chunky Oatmeal Cookies Recipe

Ingredients:

1 cup butter (2 sticks), softened
1 cup sugar
2/3 cup light brown sugar
1/3 cup dark brown sugar
2 eggs
2 teaspoon vanilla extract
1 teaspoon salt
1/2 teaspoon baking powder
2 teaspoons baking soda
2 1/4 cups flour
2 cups rolled oats

Instructions:

Heat oven to 350 degrees F. Mix together butter and sugars until creamy. Add eggs and vanilla and mix until fully combined. In a small bowl, mix together flour, salt, baking powder, and baking soda. Gradually pour the flour mixture into the batter and mix until fully combined. Add oats and mix until combined. Bake for 10-12 minutes until slightly browned.
