Chicken Parmesan

Sometimes I swear I've got a little bit of Italian mixed in with the Greek in me.  I've been on a real Italian style cooking kick lately, and when the craving kicked in again, I decided it was time for some homemade Chicken Parmesan.  A few months ago I made Baked Chicken Parmesan, and just recently I conquered a Chicken Parm Lasagna, frying small pieces of breaded chicken to go in the layers, but since I had yet to make the original, I decided now was the perfect time to.





I started off by dipping some thawed chicken breasts in a small bowl with some beaten egg, then I coated it in some bread crumbs mixed with Italian seasoning.


Next, I added the chicken to some hot olive oil heated over medium-high heat.


I let the chicken cook for about 3-4 minutes on each side, then flipped them and browned the other side.  Then I placed them in the oven and baked them for 10 minutes, until the chicken was fully cooked throughout.


I baked the chicken in the oven for 10 additional minutes because the breading was starting to burn a bit and I wanted to make sure it was fully cooked.  For the last few minutes, I added some provolone cheese to melt over the top.  I set out the finished chicken parm with some pasta and dinner was served.


Now this was some great chicken.  It was cooked just right and wasn't too greasy at all.  For future reference, I think the best way to get it to cook all the way through would be to tenderize the chicken first and get it thinned down a bit so that it can fully cook in the oil.  And I'm sure adding some extra seasonings and maybe stealing some more fresh parsley and oregano from my little herb garden will make the flavor even better, but I'm happy I finally made the real deal.  Another one for the recipe collection!

Chicken Parmesan Recipe

Ingredients:

3-4 tablespoons olive oil
3 chicken breasts
1 egg
3/4 cup bread crumbs
1 tablespoon mixed Italian seasoning

Instructions:

Heat olive oil in a cast iron skillet over medium-high heat.  Pre-heat oven to 350 degrees F.  In a small bowl, beat egg.  Mix bread crumbs and Italian seasoning on a plate.  Dip chicken breast in egg, then coat both sides in bread crumbs.  Add chicken to skillet and cook for 3-4 minutes on each side, until browned.  Place chicken on a baking pan and cook for 10 minutes, until chicken is fully cooked.  Add provolone cheese for the last 3-5 minutes of baking.  Serve with fresh pasta.
