Crock Pot Bourbon Chicken

Crock pot meals are always a treat and make cooking dinner so easy, it hardly qualifies as cooking.  I made Dr. Pepper Bourbon Chicken a while back and it was great, but once I spotted a slow cooker bourbon chicken recipe I knew I had to give the crock pot version a shot.  I didn't have the apple juice on hand, so I improvised with orange juice instead and decided to add in some Sriracha sauce to kick up the spiciness.





First I mixed together the water, soy sauce, orange juice, light brown sugar, cornstarch, olive oil, ketchup, Sriracha chili sauce, cider vinegar, minced garlic, crushed red pepper flakes, and ginger in the crock pot and stirred it with a fork until combined.


Next, I cut the chicken breasts into small pieces, then added it to the mixture.


I set the crock pot on high and let the chicken cook for 4 hours.


I served the finished bourbon chicken over rice.


I can totally understand why this recipe was called "crack" chicken because it was so delicious.  My husband and I ate it like it was going out of style, demolishing the leftovers by the next day.  It was definitely not too spicy, so next time I'll to Sriracha sauce.  And maybe one of these days I'll actually try bourbon chicken with apple juice!  This recipe is nothing less than great.

Crock Pot Bourbon Chicken Recipe

Ingredients:

4-5 boneless chicken breasts
1/2 cup water
1/3 cup soy sauce
1/4 cup orange juice
1/3 cup light brown sugar
2 tablespoons cornstarch
2 tablespoons extra virgin olive oil
1 tablespoon ketchup
1 tablespoon Sriracha chili sauce
1 tablespoon cider vinegar
1 teaspoon minced garlic
3/4 teaspoon crushed red pepper flakes
1/4 teaspoon ginger

Instructions:

Cut chicken into pieces about 1/2" in size. Mix together water, soy sauce, orange juice, light brown sugar, cornstarch, olive oil, ketchup, Sriracha chili sauce, cider vinegar, minced garlic, crushed red pepper flakes, and ginger in the crock pot. Add chicken and cook on low 8 hours or high 4 hours.
