I was in the mood for something creative and different for dinner when I stumbled on a unique Pinterest find combining chicken, cheese, and potatoes to create a Crock Pot casserole.

I didn't have any tater tots as the original calls for, but I did have seasoned fries and plenty of cheddar cheese! So I decided to add in some paprika for the seasoning and create Cheesy Chicken and Fries in the Crock Pot.
I started out by laying some fries in the bottom of my Crock Pot, then added a cup of cheddar cheese over it. Next, I seasoned both sides of 6 chicken breasts with salt, pepper, and paprika, and place them over the fries and cheese. I topped it off with another layer of fries and cheese, and poured some milk over everything.
I cooked the chicken for 2 hours on high, then switched it to low to prevent it from burning. I've had a couple of experiences with burning the edges of meals in my crock pot, and didn't want all the fries on the bottom to get overcooked.
The chicken was shredding after 4 hours, and it was ready to serve.
Now this turned into something really unique but delicious. The fries ended up turning into chunky mashed potatoes, and the seasoning from the fries gave it a bit of a kick. The chicken was incredibly tender and the whole thing really turned out to be a great all-in-one meal. This one was so easy to prepare and I'd love to try it again with tater tots or even just some fresh sliced potatoes to see how it comes out.
Crock Pot Cheesy Chicken and Fries Recipe
Ingredients:
1 bag french fries (I used about about 3/4 of a 32 ounce bag)
5-6 chicken breasts
2 cups cheddar cheese
1 tablespoon paprika
1 tablespoon pepper
1 tablespoon salt
3/4 cup milk
Instructions:
Add half of the french fries to the crock pot, then add half of the cheese over them. Season each side of the chicken breasts with salt, pepper, and paprika, then layer over the fries and cheese. Top with the remaining french fries and cheese, then pour the milk over everything. Cook for 2 hours on high then switch to low for 2 hours, or cook on low for 6 hours (until chicken is cooked throughout).
