Lemon Dijon Salmon
I've been on a fish campaign lately. I was just so excited that my first few fish cooking experiences turned out so well with Marinated Salmon and my Parmesan Crusted Tilapia, I decided to take the last 2 salmon fillets I had and make something different. The fact that fish is lean and full of vitamins makes me want to make it even more!
I used dijon mustard a while ago in a Dijon Chicken recipe and it was very strong in flavor. It was my first time cooking with dijon, so I didn't realize how powerful the flavor could be. But seeing that this mustard salmon recipe was light on the mustard sparked my interest and I decided to give it a try.
First I mixed the dijon mustard and lemon juice together in a small bowl, then decided to toss in some parsley to add some extra flavor. I spread the mixture on both sides of the salmon and placed the fillets on a foil-lined baking sheet.
Next, I baked the salmon for 12 minutes, until the fish turned a lighter pink color and the fish flaked apart easily.
This turned out great. I admittedly was a little concerned the dijon would be overwhelming, but it was actually perfect mixed with the lemon juice and parsley. I have a feeling the same mixture would go great on chicken as well. My husband loved it too, and our cats went absolutely crazy smelling the fish throughout the house. This would really be great served up on a salad, but this time I went for it with some steamed broccoli (healthy dinner = check!). I've been told flounder is another great fish to cook with and can't wait to dive into some shrimp dishes as well. Yum!
Lemon Dijon Salmon Recipe
Ingredients:
1 1/2 tablespoon dijon mustard
1 tablespoon lemon juice
1 teaspoon parsley
Instructions:
Heat oven to 400 degrees F. Mix dijon mustard, lemon juice, and parsley together in a small bowl. Spread over both sides of salmon and place on a foil-lined baking sheet. Bake for 12 minutes, until salmon flakes apart easily.
