Marinated Steak

So my husband and I celebrated our wedding anniversary a few days ago, and to celebrate we decided to make some homemade steak.  The Pan-seared, Oven Baked Steak I made when I first started blogging has become our standard, but I wanted to change things up to see what we could come up with.  After picking up some Top Sirloin steaks, I started looking at recipes.

I stumbled on a marinade recipe that was highly rated and sounded just plain awesome and decided to make it with a few adjustments, adjusting some of the quantities but sticking with the basic recipe.  I've done a few marinades before (Chicken Gyros and Marinated Salmon were utterly fantastic), but this was my first time trying it out with steak.

In a large container with a lid, I mixed the marinade by combining soy sauce, olive oil, lemon juice, Worcestershire sauce, minced garlic, basil, parsley, and white pepper.  I opted to skip out on using a blender to crush the spices any further and just mixed it all together.  I added in the steaks and coated both sides, then covered it with a lid and let it marinate for 3 hours.


Now, after marinating the steak I decided to follow the same method as I had in the Pan-seared, Oven Baked Steak recipe and got out the cast iron skillet.  I melted some butter in the pan and once it was searing (hot enough to bubble), I added in the steaks.  I cooked them for about 5 minutes on each side, scooping the butter over the top of the steaks throughout cooking.
I moved the steaks to a broiler pan next and placed them in the oven for 10-15 minutes.  These were thick steaks, so they took a bit longer (and my husband and I prefer them medium).



Served with a bit of red wine and some basic sides, we had quite the delicious anniversary dinner on our hands.


Now, my last steak method was a big hit with my husband and my family when I made it for them.  But, to my surprise, my husband said he thought this version was even better!  They were so moist and delicious, and I cooked them until they had a bit of pink in the center but weren't quite rare.  One of the steaks was thicker than the other, so initially it was a bit rare when I pulled it from the oven so I let it go a few more minutes until it was cooked to my tastes.  The seasoning was awesome, and you could definitely taste the Worcestershire and soy sauce; I thought the soy sauce was a unique ingredient but it really went well.  I really think the combination of marinating and the cooking method of pan-searing and finishing the steaks in the oven make for the perfect moist steak, and I'm hooked on using the stove-top and oven cooking method.  I was so happy with our dinner and we even have a few steaks leftover for next time...I think another marinade will be in order!

Marinated Steak Recipe

Ingredients:

1/3 cup soy sauce
1/2 cup olive oil
1/2 cup lemon juice
1/4 cup Worcestershire sauce
2 teaspoons minced garlic
2 tablespoons crushed basil
2 tablespoons parsley
1 teaspoon white pepper
2 steaks
1/4 cup butter
3 tablespoons olive oil (for cooking steak)

Instructions:

Mix soy sauce, olive oil, lemon juice, Worcestershire sauce, minced garlic, basil, parsley, and white pepper together in a large container with a lid (or plastic bag with zipper seal). Add the steak and marinate for up to 8 hours. When ready to cook, pre-heat oven to 400 degrees F. In a cast iron skillet, melt 1/4 cup of butter and add 2 tablespoons olive oil and heat to searing. Add steaks and cook for 3-5 minutes on each side, until browned. Spoon butter from pan over steak while it cooks. Move steaks to broiler pan and place in oven for about 10 minutes until cooked (depending on thickness and how well done you like your steak).
