Chicken Kabobs

I was trying to think of something for dinner a few nights ago when I spotted my skewer sticks in the cabinet. Realizing I had not grill to cook some kabobs on, I decided to give them a shot in the oven. A couple months back a friend of mine made some kabobs on the grill after marinating chicken with Italian dressing, so I decided to follow that method and add in some olive oil and seasonings to change it up.

First I mixed together the olive oil, Italian dressing, crushed red pepper, and oregano in a bowl.  I added the chicken and covered the bowl, then let the chicken animate for 30 minutes.



I cut up the onion and pepper into large chunks in the mean time, and soaked the wooden skewers in water so they wouldn't burn.


Once the chicken was ready, it cut it into chunks about 1 1/2 inches in size.  I placed the meat on the skewers, alternating the pepper and onion with it, then set the kabobs on a foil lined pan.



I baked them for 25 minutes, until the chicken was fully cooked.


I made some rice and black beans to go alongside the kabobs and an awesome dinner was served.  The chicken marinade was awesome, and the chicken stayed pretty moist in the oven (though next time I will marinate the chicken for longer so it is even better).  The rice and black beans made the perfect side and I was more than happy with our healthy, lean dinner that night.  Now I just need to get a grill to really do these right!

Chicken Kabobs Recipe

Ingredients:

3 chicken breasts
1/4 cup olive oil
1/3 cup Italian dressing
1 teaspoon crushed red pepper
1 teaspoon oregano
1 green pepper
1 onion

Instructions:


Mix olive oil, Italian dressing, crushed red pepper, and oregano in a large bowl, then add chicken.  Cover and marinate chicken for at least 30 minutes.  If using wood skewers, soak in water.  Cut pepper and onion into large chunks.  Once chicken is ready, cut into cubes 1-2 inches in size.  Alternate chicken, pepper, and onion on skewers and set on a foil lined pan.  Bake for 20-25 minutes until chicken is fully cooked.
