Eggless Brown Sugar Cookies

I was in the mood for some cookies, but tragically had run out of eggs.  This could have dampened my baking spirits, but instead I recalled that I had made Eggless Triple Sugar Cookies during another egg-free occasion.  I decided to give the recipe a try again, sticking with just brown sugar this time around and cutting the recipe in half to make just enough for 1 pan.




First, I beat together the butter and sugar until it was fluffy, then added the vanilla, flour, cornstarch, and water and stirred until it was combined.


I scooped the dough onto a parchment lined cookie sheet and baked the cookies for 20 minutes, until they were lightly browned.


And voila!  The cookie craving was handled.  These were soft and sugary and you really wouldn't know there were no eggs in them.  As usual, brown sugar does nothing but improve recipes, and using that instead of the variety in the original recipe made them even better.  My husband wasn't the biggest fan, as he prefers Chocolate Chip-less Cookies, but I found them delectable and the perfect fix to fulfill my cookie desires.  Now I just need to try making some of those vegetable cookies or brownies I always see recipes for.

Eggless Brown Sugar Cookies Recipe

Ingredients:

1/2 cup butter
1/4 cup + 1/8 cup brown sugar
1/4 teaspoon vanilla
1 cup flour
1/2 teaspoon cornstarch
1/2 tablespoon water

Instructions:

Heat oven to 375 degrees F. In a large bowl, beat butter and sugar until fluffy. Add vanilla, flour, cornstarch, and water. Blend well. Drop by spoonfuls onto greased cookie sheet. Bake for 10-12 minutes until light brown.
