Lemon Garlic Tilapia

TILAPIA TIME!  So I got the itch for some tilapia cooking again.  It's so easy and always comes out delicious no matter what I seem to season it with. If I can eat healthy and have it taste good, too, how can I resist?



My initial plan was to shoot for some Tilapia Tacos, but all the recipes I found called for lime juice and I am just plain out of it.  I won't let a little ingredient swap bring me down, so I tracked down another simple recipe, this time of the lemon and garlic variety.  I got a tad creative and tossed in some crushed red pepper because it's just plain delightful.

First I laid out the tilapia in a baking dish, then poured over the lemon juice and melted butter.  I sprinkled the garlic, parsley, pepper, and crushed red pepper over the top and popped it in the oven.


I let the fish bake for 25 minutes, and by then it was flaking apart and ready to go.

Of course this was another delicious recipe.  I was glad it took a smidge less time than I expected because it smelled awesome and I was absolutely ready to eat.  These particular fillets I got this time around are smaller than the ones I had with the other recipes, so making 4 was definitely a good idea.  The leftovers didn't make it 24 hours in my fridge, so I think it's safe to say I have another one for the recipe books.

Lemon Garlic Tilapia Recipe

Ingredients:

4 tilapia fillets
3 tablespoons lemon juice
1 tablespoon melted butter
1 teaspoon minced garlic
1 teaspoon dried parsley
1/2 teaspoon pepper
1/2 teaspoon crushed red pepper

Instructions:

Preheat oven to 375 degrees F. Spray or lightly coat a baking dish with olive oil.  Rinse tilapia fillets under cool water and line in casserole.  Pour lemon juice and melted butter evenly over the top, then sprinkle with garlic, parsley, and pepper.  Bake for about 25 minutes, until the fish is white and flakes apart easily.
