Chicken Stir-Fry

When I'm in the mood for a quick and easy meal, nothing beats a skillet dinner.  One pan and zero mess make me one happy cook.  But while I'm glad to lose out on extra dishes, I'm not okay with missing out on flavor.  When I got the cooking itch one night and remembered I had a bag of frozen vegetables tucked away, I knew Chicken Stir Fry was the way to go.


I used a Beef Stir-Fry from the back of a bag of Bird's Eye vegetables, swapping out a few ingredients to fit my theme.  Rather than using just soy sauce as recommended, I swapped some of it out for teriyaki sauce and mixed in a bit of sriracha to kick things up a notch.

First, I sliced the chicken into thin strips, seasoned them with salt and pepper, and cooked them in a medium nonstick skillet.


For the next part, I decided to keep the chicken in the pan so the ingredients could all cook together as opposed to removing it and adding it back in later.  I stirred in the vegetables and cooked everything for about 5 more minutes, until the vegetables were soft.


Next, I mixed in the soy sauce, teriyaki sauce, and sriracha and let the whole thing simmer for a few more minutes.


I mixed in the rice and the meal was complete.


Talk about easy!  This turned out excellent and took only a tiny bit of effort.  The sriracha definitely added a kick, so if you're looking for a less spicy option I would leave it out.  I have to say the teriyaki sauce added some awesome flavor and this recipe made so much food we had lunch leftovers for a while.  This will certainly be a repeat option for me!

Chicken Stir-Fry Recipe

Ingredients:

4 chicken breasts
1-2 teaspoons salt
1-2 teaspoons pepper
1 bag stir fry vegetables
1/4 cup soy sauce
1/4 cup teriyaki sauce
2 tablespoons sriracha sauce
2 bags instant rice

Instructions:

Slice chicken into thin strips and season with salt and pepper. Brown for about 6 minutes over medium heat, until fully cooked. Add stir fry mix and continue cooking for 5 more minutes. Add soy, teriyaki, and sriacha sauce and cook for 3-4 more minutes. Stir in rice and serve.
