Chocolate Chip Blondies

I recently picked up some German chocolate to make a cake with, and with a sale at the grocery ended up grabbing another box as well--though this time it was white chocolate.  I was excited at the opportunity to bake with it especially since I have enjoyed white chocolate chip cookies and other things. I recalled the most amazing brownie alternative a few years back, a blondie. I've made Frosted Brownies, Peanut Butter Swirl Brownies and even S'mores Brownies before, but hadn't ventured out to blondies just yet.  I'd had them only once but once I thought about them, I knew that was the recipe I needed to conquer next.


I scoured through some recipes until finally coming across a Kraft version that was perfect (many recipes called for not only baker's chocolate, but white chocolate chips as well which I did not have)
Now I was a tiny bit short on the amount of white chocolate for this recipe, as it called for 1 and 1/2 boxes of chocolate and I only had one. So I decided to toss in some chocolate chips to ensure the chocolate level was perfect.

I started off by microwaving the white chocolate and butter in a small bowl. Once the chocolate had melted, I stirred the two together.


Next, I added in the sugar, then the eggs, and finally stirred in the flour, baking powder, and salt. To get that extra chocolaty flavor, I also mixed in about 1 cup of milk chocolate chips.


The recipe suggested lining the baking pan with tin foil and spraying nonstick cooking spray, which I haven't tried before, so I gave it a shot. I poured the batter into the pan and got that bad boy in the oven.


The final product was ready after 30 minutes in the oven and by that time, I was ready to dive in.


These were amazing! I was so happy at how great these turned out. Even with a little less white chocolate in the batter than original called for, these turned out cakey and delicious. They ended up slightly browner in color than typical because I used the brown sugar, but that was a worthy trade-off for the flavor.  I've already made up my mind that next time, I'm tossing in some m&m's as that would just up the awesome factor. I took a handful of these to work and gave some to a few friends and everyone who tried them loved them!

Chocolate Chip Blondies Recipe

Ingredients:

1 teaspoon vanilla extract
1 package Baker's White Chocolate (4 ounces), broken into pieces
1/4 cup butter
3/4 cup brown sugar
2 eggs
1 cup flour
1/2 teaspoon baking powder
1/2 teaspoon salt

Instructions:

Heat oven to 350 degrees F. Break chocolate into pieces and add to a medium bowl with butter. Microwave for about 1 minute, until chocolate is melted, then mix well. Stir in brown sugar, then add eggs and mix until combined. Next, add flour, baking powder, and salt, and stir until well combined. Stir in chocolate chips. Line a baking pan with tin foil and spray nonstick baking spray over it. Pour in the batter and then bake for 30-35 minutes, until you can insert a toothpick in the center and it comes out clean.
