Barbecue Roasted Potatoes

Barbecue sauce is amazing. I'm originally from near Memphis, which is of course the best place for anything BBQ, period, so I grew up with the great taste of beef brisket and pulled pork. These days I don't eat pork, but I do still enjoy some great barbecue flavored dishes. My mom used to make these roasted potatoes coated in barbecue sauce that were just fantastic, so when I decide to make some Feta Chicken for dinner I knew they would be perfect.


For this recipe, I just decided to use some Sweet Baby Ray's barbecue sauce and tossed in a few extra seasonings to add some flavor.  I thought about using my homemade barbecue sauce from my Crock Pot Pulled Chicken with Homemade BBQ Sauce, however since I felt it would need a longer amount of cooking time to really soak up the flavor, I went with the bottled version this time around.

I started off by cutting up a few jumbo-sized russet potatoes.  After spraying a baking casserole with non-stick cooking spray, I tossed in the potato chunks.


Before adding in the barbecue sauce, I first tossed the potatoes in some olive.  My sister told me years ago that barbecue sauce will burn in the oven without some oil to keep them moist.  Next, I mixed in some barbecue sauce and added in some garlic salt and white pepper.  I made sure the potatoes were coated evenly, then added a bit more barbecue sauce over the top.


I let the potatoes bake for an hour, and they were still moist and ready to go.


Aaaaand yes.  The potatoes were just slightly crispy on the outside and soft on the inside plus were perfectly seasoned with that barbecue flavor.  They went went just right with the Feta Chicken and made for some awesome leftovers.  And they were so easy!  Next time around I will try and make some homemade barbecue sauce in advance to use and they will have an even more distinct flavor.

Barbecue Roasted Potatoes Recipe

Ingredients:

3-4 large russet potatoes
1 cup barbecue sauce
1/4 cup olive oil
3 teaspoons garlic salt
2 teaspoons white pepper

Instructions:

Preheat oven to 375 degrees F.  Spray baking casserole with nonstick cooking spray.  Cut potatoes into pieces about 1-2 inches in size and toss in olive oil.  Add barbecue sauce, garlic salt, and white pepper and potatoes evenly.  Bake for 1 hour or until potato is soft when poked with a fork.
