Roast beef is one of those recipes I've had on my list for a while but haven't conquered yet. I'm a huge fan of deli sliced roast beef and after checking out a local restaurant called Beefy King and trying their sliced roast beef sandwich not long ago, I knew it was time to make my own.
My family often had roast beef cooked in the crock pot with potatoes and carrots, but I was looking for a sliced version. After some searching, I found a very helpful how to and recipe and got to work finding the beef.
I went with a sirloin tip roast after speaking with the butcher at the grocery, despite the suggestion from the original recipe post regarding using an eye round roast. This cut was suggested because it is more tender and he thought it would work better for what I was looking to make. I'm not going to turn down help from someone who knows what they're doing!
I first rinsed off the 2.3 pound roast and coated it in a layer of olive oil, then got it set up on a roasting pan.
Next, I seasoned all sides of the roast with some salt, black pepper, and also added some white pepper.
In a small bowl, I combined the mix powdered garlic, onion, and chili powder together, then rubbed on the outside of the roast. The chili powder was a change I added in to give the roast a little bit of a kick. I ended up with a bit extra of the seasoning after coating it completely.
After the oven was preheated to 500 degrees F, I put the roast in and let it cook for 20 minutes. I lowered the heat to 300 degrees, then let it cook for 40 minutes longer. I wanted the roast medium, and since I was using a slightly smaller sized roast than the recipe had I knew an hour total would be plenty of time.
After cooking, I put tin foil over the roast beef and let it sit for about 20 minutes.
The finished roast smelled and looked amazing, so I was excited to get to slicing. I sliced the meat as thin as I was able to (though even thinner would have been even better). As you can see, it was a pink color throughout which was just perfect.
And yum! This was delicious. The meat was moist and flavorful and everyone that tried a piece said they loved it. I found it to be especially delicious sliced up and put over a salad, but I couldn't help but dig into a few slices as it was fresh out of the oven. The chili powder was not overwhelming at all, and this is definitely one I want to make again!
Roast Beef Recipe
Ingredients:
1 2.3 pound sirloin roast
1 tablespoon olive oil
2 tablespoon pepper
2 tablespoons salt
3 teaspoons white pepper
3 tablespoons powdered garlic
3 tablespoons onion powder
1 tablespoon chili powder
Instructions:
Preheat oven to 500 degrees F. Rinse roast with cold water, then coat outside with olive oil. Add black pepper, white pepper, and salt, and rub over the entire outside of the roast. In a small bowl, mix powdered garlic, onion, and chili powder together, then rub on the outside of the roast. Add to a roasting pan and cook for 20 minutes, then lower oven heat of 300 degrees F and cook for an additional 30-40 minutes. Remove from oven and cover loosely with foil for 20 minutes. Slice meat against the grain into thin slices.
