Crock Pot Cranberry Chicken

There I was, enjoying a pleasant Sunday off with my husband, when suddenly I got the urge to cook something new for dinner.  It had been a while since I cooked with my Crock Pot, and it was time to put it to good use.  After all, I have ended up with some amazing results.  I remember seeing this delightful sounding recipe on Pinterest a while back, and decided to try out something similar.

When I first saw Crock Pot Turkey Breast many months ago, I desperately wanted to give it a shot.  The problem was that whenever I'd check prices on whole turkey breasts, they were just too expensive for me to justify spending on one meal, even at the wholesale club.  I decided to try something different and make it with chicken, since I had just picked some up.

I started out by thawing the chicken, then layered it in the bottom of the Crock Pot after spraying it with some olive oil to prevent sticking.  Next, I added seasoning.  The recipe called for a packet of french onion soup mix, so I came up with my own version based on something I had made before. On top of the chicken, I sprinkled dried minced onion, beef bouillon granules, brown sugar, powdered garlic, powdered onion, salt, and white pepper.


Next, I took a can of whole berry cranberry sauce and scooped it over the chicken.  I ended up not using any orange juice this time around.


I set the Crock Pot to high and let the chicken cook for 3 hours.  By that time, it was already shredding with a fork, so I could tell it was ready.


To go along with it, I made some steamed vegetables and beer stuffing, using a stove top version of the Beer Chicken and Stuffing Bake I made some time ago.  It is so good!


Yum!  I don't know how it works, but this chicken seriously tasted like turkey.  It was so moist and just had the most delicious taste that made me wish it was closer to November.  I really liked the cranberries mixed in, and having stuffing alongside just made this meal even better.  I will have to try the orange juice addition next time around just to see how it affects the flavor, but this dish is perfect as is.

Crock Pot Cranberry Chicken

Ingredients:

6 chicken breasts
1 can whole berry cranberry sauce
3 tablespoons dried minced onion
1 teaspoon beef bouillon granules
1 teaspoon brown sugar
1 teaspoon powdered garlic
1 teaspoon powdered onion
1/2 teaspoon salt
1/4 teaspoon white pepper

Instructions:

Layer chicken it in the bottom of a Crock Pot sprayed with nonstick cooking spray.  Sprinkle dried minced onion, beef bouillon granules, brown sugar, powdered garlic, powdered onion, salt, and white pepper on top of the chicken.  Spoon the cranberry sauce over it and cover.  Cook on high for 3-4 hours.
