I started out by cubing some sweet potatoes and boiling them until they were soft, about 25 minutes.
Next, I used a potato masher to mash the potatoes until they were creamy, and scooped in some Greek yogurt, salt, and pepper.
I mixed it all together and voila, the perfect side.
Now these were very rich and went great with the cabbage. The salt and pepper gave these the perfect seasoning to be a mashed potato replacement. Some people, like my Dad, tend to believe sweet potatoes belong in sweeter dishes like sweet potato casserole, but I found this to be the perfect alternative to plain mashed potatoes. And with the Greek yogurt, this ended up being quite the healthy dish. This is one I will repeat again and again!
Greek Yogurt Mashed Sweet Potatoes
Ingredients:
2 large sweet potatoes
1/4 cup Greek yogurt
1 teaspoon salt
1/2 teaspoon pepper
Instructions:
Peel sweet potatoes then cut into even pieces about 1-2 inches in size. Boil in water for 25 minutes, until fork tender. Drain, then mash. Add in Greek yogurt, salt, and pepper; stir and serve.
