She had her heart set on this Oreo cheesecake recipe from Pinterest, and anytime I'm new to something I'm up to give it a try. I had popped in to our local Aldi for what we needed, and I have to admit that though these are an Oreo recipe, I used a store brand of cookie for 'em. And since we just call those Oreos, the recipe kept it's name.
In a mixing bowl, I beat the cream cheese and sugar together until well combined. Next, I mixed in the Greek yogurt and vanilla, then gradually added in the eggs.
I crushed up some of the Oreos, then added them into the filling.
Finally, I stirred in the cookie bits to finish off the filling.
I set up the cupcake papers with cookies in the bottom of each.
Next, I scooped the filling on top and popped them in the oven. I ended up with more than 12.
I let the cupcakes bake for 20 minutes, until they were set in the middle and slightly browned on top.
Rich, cheesecake goodness combined with the flavors of a cookie? Oh yes. The Greek yogurt went nicely, and I didn't notice it in the flavor. The chocolate cookies were the real heart and soul of this cookie, with the tidbits in the filling staying slightly crunchy and the bottom layer making a great little crust. Now I didn't serve these cookie side up as recommended as it just made sense to me to have them like mini cheesecakes. I wouldn't eat a slice of pie or cheesecake crust side up! Best of all, these were so easy and only took a few minutes to throw together. Baking, you're the best.
Oreo Cheesecake Cookies Recipe
Ingredients:
20 Chocolate Sandwich Cookies
2 packages cream cheese, softened (8 oz. each)
1/2 cup sugar
1/2 cup Greek yogurt
1/2 teaspoon vanilla
2 eggs
Instructions:
Heat oven to 350 degrees F. In a mixing bowl, beat cream cheese and sugar until well blended. Stir in Greek yogurt and vanilla until combined. Add in eggs and mix well. Crush remaining cookies and mix into filling. Add 12 cookies to the bottom of cupcake liners. Scoop into cupcake wrappers. Bake for 20 minutes, until centers are set. Cool before serving.
Just thinking about cheesecake sets my mouth to watering for a big piece of the light, airy confection made with a graham cracker crust and smooth creamy vanilla filling, with a favorite topping of cherries or strawberries or blueberries or streusel - - - or you can choose for yourself if you like.
