S'more Cookies

Cookies are never a bad thing.  Bring someone a cookie and you have an instant mood booster on your hands.  The same thing goes for Smore's...who can deny that that mix of melted chocolate, sweet graham cracker flavor, and marshmallows goes together like peanut butter and jelly?  I got the urge to bake (as I often do, clearly) and in trying to think of something new, decided to adapt some chocolate chip cookies into something a little fancier with not just chocolate chips, but marshmallows and graham crackers.  There was no question--this was going to be a success.

I'm no stranger to s'more experiments.  These basic ingredients have been lighting up taste buds for years, and I hopped in with S'mores Brownies way back when I was first getting really into baking.  Experimenting with food is fun!

I followed my usual chocolate chip cookie recipe, where I use brown sugar for a rich flavor.  I made the base dough by mixing the butter, brown sugar, butter, vanilla and almond extracts together until fluffy. In a small bowl, I mixed together the dry ingredients--flour, salt, baking soda, cinnamon and ginger. The cinnamon and ginger is something I had started tossing in my chocolate chip cookies last year and decided not to lose out on a good thing but skipping them this time.  Then, I gradually added the dry ingredients into the butter mixture to get my cookie dough ready for some fillings.  


That's when it was time to get these ready to be true S'mores.  I crushed up some graham crackers and mixed them in with the chocolate chips and marshmallows.  Perfect.


Just a little bit of stirring and everything was ready for baking.


Now, added spoonfuls of dough to a parchment lined baking sheet.


And there we have it!  Soft and chewy S'mores in cookie form.


The marshmallow and graham crackers really made these chocolate chip cookies something else.  They both melded in well with the cookie, and there was not a whole lot of crunch in the graham cracker, just the flavor.  The marshmallows basically dissolved in there, but did add to the chewiness.  I think it would me smart to put some on top during the last few minutes of baking to add the visual look of a s'more.  This is one great way to have the s'more flavor without the mess at home and if no campfires are available!

S'more Cookies

Ingredients:

1 cup butter, softened
1 1/2 cup brown sugar
1 teaspoon vanilla extract
1/4 teaspoon almond extract
2 tablespoons heavy cream
2 eggs
2 1/4 cups flour
1 teaspoon salt
1 teaspoon baking soda
1/2 teaspoon cinnamon
1/4 teaspoon powdered ginger
1 cup crushed graham crackers
1 cup mini marshmallows
1 bag milk chocolate chips (11.5 ounces)

Instructions:

Heat oven to 375 degrees F. In a large mixing bowl, beat butter, brown sugar, vanilla and almond extracts together until fluffy. Mix heavy cream, then add in eggs one at a time until well combined. In a small bowl, stir together flour, salt, baking soda, cinnamon, and ginger. Gradually mix flour mixture into wet ingredients until combined. Stir in chocolate chips, graham crackers, and marshmallows. Scoop dough onto parchment-lined cookie sheets. Bake 10-12 minutes, until edges begin to brown.
